Hey guys, today I want to talk about my favourite breakfast. This is what I eat every week day. I decided a few months ago I was done with processed cereal and that I wanted to start eating a whole breakfast. This keeps me full until lunch and is, at least in my opnion, the perfect breakfast. And because the oats are made in advance it's not much effort to put a bowl together.
Prep: 30 minutes to 8 hours Cook Time: 5 minutes
- 1 cup steel cut oats
- 1 can of light coconut milk
- 2 cups of water
- 1 teaspoon cinnamon
- ½ cup almond milk
- 1 tablespoon of agave syrup or sugar-free sweetener, such as Stevia
- ½ cup berries or 1 banana
- ¼ cup slivered almonds
- ¼ cup toasted coconut (optional)
You have two options when cooking the steel cut oats. I cook mine in a slow cooker overnight. If you would like to do the same spray the inside of your slow cooker pot. Mix the oats, coconut milk, water, and cinnamon together in slow cooker. Turn the cooker on low before you go to bed and turn it off when you get up in the morning. If you don’t have a slow cooker, the oats can be cooked on your stovetop. Mix all the ingredients in a pot and bring to a boil. Once it’s boiled turn down the heat to low and let cook for 30 minutes. Keep a watch on the pot as it can easily boil over.
I use the steamer attachment on my espresso maker to steam the almond milk while I reheat the cooked oats for 90 seconds in the microwave. You can also microwave the cooked oats and almond milk together. Mix in the agave or sweetener, followed by the berries or banana, and top with the almonds and coconut.
This breakfast actually makes me look forward to mornings, as much as I can since I'm the worst at mornings.
