Vegan Irish Stew

It's cold and snowy in Edmonton today. The perfect kind of day for a bowl of hearty stew. This is a simple recipe. Almost everything goes into the pot at once and you just let it cook. Stir every now and then and finish with a bit of green. That easy. To make your own Vegan Irish Stew you will need: 1 can of white beans (drained & rinsed), 1 tablespoon of olive oil, 2 cups of yellow potatoes (roughly chopped), 2 cups of carrots (1/4 inch slices), 1/2 of a can of Guinness,  2 cups of vegetable stock, 1 tablespoon of arrowroot powder or cornstarch, the seasoning of your choice, and 1 cup of frozen peas.

Start by heating the oil in a large pot. Add the white beans, season (I used salt & pepper, oregano, and garlic powder), and dust with the arrowroot powder. Pour in the liquid and the add the potatoes and carrots. Turn heat to low and cover and cook for 20 - 30 minutes. Just before the stew is done, check your seasoning and add your frozen peas. I used Lima beans because we were out of peas.
