This bread was inspired by a recipe found in Martha Stewart Living. It's a hearty bread best used to dip into a soup or veggie stew. You will need 2 1/2 cups of all purpose flour, 1 1/2 cups of whole wheat flour, 1 teaspoon of salt, 1 1/2 teaspoons of baking soda, 2 cups of soy milk mixed with 1 tablespoon of apple cider vinegar.
Preheat your oven to 425F. Mix the soy milk and apple cider vinegar together and set aside. In a large bowl, whisk together the dry ingredients. Form a well in the middle of the dry ingredients and slowly pour in the soy milk mixture. Gently bring together the flour mixture and the soy milk mixture, careful not to over mix. Once the ingredients have been combined, dump them out onto a floured work surface and form the dough into a ball and then pat into a domed round shape. With a floured knife, cut a 1 inch deep x shape into the top of the dough. Next, using a floured skewer, pierce the dough as seen in the photo above. Place the dough on a baking sheet and bake for 30 minutes. Turn the bread over and bake for another 10 minutes upside down. Allow to cool completely before serving.
