Vegan Pumpkin Scones

I'm a fan of easy recipes that involve pumpkin. This is one of my go to recipes. Quick to make and so tasty.

You will need 3 cups of flour, 1/2 a cup of vegan sugar, 2 tsp baking powder, 1 tsp baking soda, 2 tsp ground cinnamon, 1 tsp of freshly grated ginger (or powdered if you prefer), 1/2 tsp cardamom, 1/4 tsp nutmeg, 1 tsp vanilla extract, 1/2 a cup of vegan margarine (at room temperature), and 2 cups of pureed pumpkin. 

In a bowl, whisk together all of your dry ingredients. (Feel free to experiment with the flour. Some wheat-free flours make this a wetter dough so you may need to adjust for that.) If you're using fresh ginger, add it in with the wet ingredients. I keep my ginger in the freezer. It stays fresh and it's easier to peel and grate. With a spoon, stir in the vanilla, margarine and the pumpkin. Dust your work surface with a bit of flour and turn your dough out onto it. Need it a few times to form a ball and then flatten it into a disk about inch thick. Cut this like you would a pizza, creating 8 triangular pieces. Lay them out onto a parchment lines baking sheet and bake at 435F for 12 minutes.
