Vegan Pumpkin Bread

Oh fall, how I love you! Such beautiful colours and SO MUCH PUMPKIN! This Vegan Pumpkin Bread is so delicious and pumpkiny. The perfect fall recipe.

My recipe is adapted from this one. You will need:

3 1/2 cups of the flour of your choice

2 cups of packed brown sugar

2 tsp of baking soda

1 tsp of ground nutmeg

2 tsp of ground cinnamon

1 tsp of fresh ground ginger

2/3 cups of brown rice syrup or agave

2 cups of pumpkin puree

1 cup of veg oil

2/3 cup coconut milk

1 tbsp of blackstrap molasses

1/2 cup carob chips

Preheat your oven to 350F. In a large bowl, whisk together the dry ingredients. In another bowl, stir together the wet ingredients. Mix the pumpkin mixture with the dry ingredients until just combined. Stir in the carob chips. Divide the batter between two loaf pans. Cover the pans with tinfoil and bake in the oven for and hour to an hour and fifteen minutes. Let the loaves cool in the pans before removing them.
