Beet & Goat Cheese Tart

Beets and goat cheese are like a match made in heaven. This tart is super simple to make and oh so tasty. You're going to need 1/2 a package of store bought puff pastry, 4-5 medium sized beets, 1 tablespoon of olive oil, 1 tablespoon of balsamic vinegar, 1 teaspoon of herb de provence, salt & pepper, and 1/2 a cup of soft goat cheese.

Start by peeling the beets and then slicing them into 1/4 inch thick slices, discarding the ends. Boil the beet slices in a pot of boiling water. I'd recommend covering the pot with a lid since this can get a bit messy. While the beets are cooking, roll out the puff pastry to fit in a tart pan. Grease the pan and then place the puff pastry in to it. Tuck in any overhanging edges. When the beets are soft enough to slide a knife easily into them, remove the pot from the heat and drain the beets. Place them in a bowl and toss them with the olive oil, balsamic vinegar, herb de provence, and salt & pepper. Layer the beet slices over the puff pastry. Top with dollops of the goat cheese. Bake in the oven at 375F for about 30 minutes. So delicious!
