Green Mac & Cheese


I have something to confess. I love vegetables. There are very few vegetables that I don't like. If I go a day without eating something green, my body hates me for it. On the other hand, I have a weakness for Kraft Dinner. When I was a kid I avoided most vegetables and KD made regular appearances in my life. So what if I want both? The other day I had this dilemna and here's what I came up with: Green Mac & Cheese.


There's actually not a lot of cheese happening in this dish but it's delicious in its own way. This is a super simple, use what you have in your fridge, kind of meal. I used a couple sliced mushrooms, a cup of halved brussels sprouts, a few spears of  chopped asparagus, and a bit of broccoli. I boiled half a box of whole wheat macaroni while the veggies were cooking in a bit of olive oil. To add some flavour I threw in some garlic powder, herb de provence, and half a cup of white wine. When the pasta was done I drained it and added it to the veggies, turned off the heat, and grated in about half a cup of parmesan cheese. 10 minutes worth of cooking for a bowl full of tasty results.
