First of all let me say that I'm a "from scratch" kind of gal when it comes to baking. It almost pained me to buy boxed cake mix, but since I brought back a sick cold with me from Florida, I wasn't really up for full-on homemade. So I committed a baking sin and made these cupcakes from a box mix (insert gasp here). I blame Pinterest. It was there that I came across a recipe for a Pink Lemonade Bundt cake and I was intrigued. These cupcakes are full of sweet lemon flavour and hey, no one has to know you used cake mix.
To make these you need: a box of lemon cake mix, a box of jello lemon pudding powder, 1/2 a can of frozen pink lemonade concentrate, pink food colouring, 4 eggs, 1/2 a cup of veg oil, and 1/2 a cup of milk. Mix all these ingredients together, pre-heat your oven to 350 C, line a muffin tin with paper liners, and spray with cooking spray. You only need to fill the cups about halfway full with the batter. Bake for about 17 minutes, depending on your oven. The glace is also super simple. I free styled this with icing sugar, pink lemonade concentrate, and pink food colouring. Wait until the cupcakes are cooled before glazing. Add some sprinkles if you like.
