Balsamic Brussels Sprouts

This may be hard to believe but last week I had brussels sprouts for the first time in my life. I'm generally not too picky when it comes to fruits and vegetables and there are very few that I can say I honestly don't like. Sometimes you just have to try something to find out that it makes your taste buds happy. Eager to try cooking them myself, I picked up a bag of frozen brussels sprouts earlier this week and whipped up this tasty dish soon after.

For a single serving you'll need:

  • a cup of frozen brussels sprouts
  • 1/4 of a red onion
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of oregano
  • salt & pepper to taste

Heat a non-stick pan on medium heat. Add the oil. While the pan is heating up, slice the onion into thin slices.

Add to the pan and season with salt & pepper. Cook until the onions are soft and start to become golden in colour. While the onions are cooking, microwave the brussels sprouts in a bowl with a tablespoon of water for about 3 minutes. Drain the water and cut each sprout in half. Add to the pan with the onions. Drizzle in the balsamic vinegar and sprinkle with the oregano. Add more salt & pepper if needed. Remove from heat.

Balsamic Brussels Sprouts

I ate this with a cup of cooked quinoa and it makes a great lunch or dinner. You can easily make a larger batch and serve this as a side dish as well. Enjoy! xx Allison
