Grant and I spent last weekend at the Calgary Comic and Entertainment Expo. This was our second expo and the highlight was meeting Stan Lee. We stopped in Red Deer to hit up the Value Village (photos later this week!) and grab lunch and donuts at the Donut Mill. I love road trips with Grant - they're so much fun. We make a trip to Calgary about once a year and we usually hit up Recordland to browse through the thousands of records. Until next time Calgary!

Spring has finally arrived and I have gardening on the brain! Living in an apartment can limit your options as far gardening goes but if you get creative you can create a unique container garden on your balcony or in a window. Here's a great article on planning a balcony garden.

These past couple of weeks have gone by so quickly that I wasn't able to put a lot of love into my blog. I started a new job last week (my first full-time job in four years!) and I'm still working on managing my time. At the end of my 9 - 5 day, it's hard to find the motivation I had before. But I promise things will get back to normal around here soon! This weekend Grant and I are in Calgary for The Calgary Comic and Entertainment Expo. When we heard Stan Lee was coming this year, we knew we couldn't miss the opportunity to meet the comic genius. I'll share photos with you next week!

It's no secret that I LOVE potatoes. One of my favourite ways to consume this delicious vegetable is in a breakfast setting - hash brown style. My speciality are these Southwestern diced potatoes. Quite frankly, you don't need a recipe for this. It's a matter of taste and how many potatoes you have on hand. To start things off, peel your potatoes and cut them into bite size pieces. Heat a large frying pan over medium heat. Add a few tablespoons of vegetable oil. Toss in your diced potatoes. Toss them around a bit to get them coated with the oil. Now for the seasoning. The most important ingredient here is smoked paprika. I added about a tablespoon, but it really is up to you how much you want to add. I also added garlic powder, cayenne pepper, oregano, chili powder, tumeric (mostly for colour), and salt and pepper. Start out light with the seasoning and add more to suit you taste buds. Keep tossing the potatoes every couple of minutes and continue cooking until the potatoes are soft but not mushy. These are the perfect side to scrambled eggs or tofu.

This past weekend Grant and I headed down to California to take in Coachella. It had been four years since I'd been to the festival and Grant had never been before. The weather didn't always treat us well but the music made up for it. Being there is such an amazing experience. I love when the sun sets and the grounds light up. You couldn't ask for a better setting than the California desert. I hope I can go back next year!
